Iasa – Cetara in vetro

Caveau, non è soltanto lingotti d’oro, gioielli o banconote, ci sono locali che custodiscono ingenti e preziosi valori espressi in alici. Ma facciamo un passo indietro nel tempo…. 

Furono i monaci della Costiera Amalfitana a conservare le alici sotto sale; pressate in contenitori di legno, i ”terzigni”, maturavano e percolavano un liquido che raccolto e conservato diveniva un condimento molto saporito, una versione nobile del Garum romano.

Il procedimento si diffuse poi a tutte le famiglie di Cetara che fondamentalmente vivevano di pesca. La Colatura tradizionale di alici, da circa dieci anni è una salsa molto apprezzata, divenuta Presidio Slow Food ha palesato le spiccate peculiarità gastronomiche del borgo costiero.

Francesco Di Mauro, cetarese di origine, nel 1969 impiantò a Salerno l’azienda Iasa, ampliando le prospettive dell’atavica attività di famiglia. Dalla produzione della colatura di alici, dei filetti e della pasta di acciuga, dopo un buon riscontro sul mercato nazionale, inserì quella dei filetti e dei tranci di tonno rosso, bianco, pinna gialla e dello sgombro, tutto esclusivamente conservato sott’olio o al naturale in vasi di vetro, per evidenziarne i pezzi interi tagliati e inseriti rigorosamente a mano.

Oggi sono i tre figli, Lucia, Salvatore e Vincenzo a dirigere l’azienda artigianale Iasa, ognuno con il compito che gli è più congeniale, un’eredità non semplice da gestire, considerando le grandi energie investite da papà Francesco. La passione che ha saputo trasmettergli, li vede impegnati in una produzione di alta qualità nel rispetto delle ricchezze del mare, un messaggio della tradizione e della cultura di Cetara si ripete in ogni prodotto.

The process then spread to all the families of Cetara who basically lived off fishing.

The traditional Colatura di Alici, for about ten years has been a highly appreciated sauce, becoming a Slow Food Presidium has revealed the distinct gastronomic peculiarities of the coastal village. Francesco Di Mauro, originally from Cetara, established the Iasa company in Salerno in 1969, expanding the prospects of the ancestral family business. From the production of anchovy sauce, fillets and anchovy paste, after a good response on the national market, he introduced the production of fillets and slices of red, white, yellowfin tuna and mackerel, all exclusively preserved in oil or natural in glass jars, to highlight the whole pieces cut and inserted strictly by hand.

Today the three children, Lucia, Salvatore and Vincenzo run the artisan company Iasa, each with the task that is most congenial to them, a legacy not easy to manage, considering the great energy invested by their father Francesco. The passion that he was able to transmit to them, sees them committed to a high quality production respecting the riches of the sea, a message of tradition and culture of Cetara is repeated in every product.
