La ricetta originale di Giulio Cocchi prevede l’uso di erbe come la china e il rabarbaro che tingono leggermente di bruno il bel vino chiaro. Per accentuare la tonalità ambrata si aggiunge lo zucchero imbiondito preparato sul fuoco come per il crème caramel che, con il colore, dona anche una nota speciale al gusto: croccante e zucchero filato in grado di arrotondare tutti i gusti amari senza far uso di vaniglia.

Un vermouth che emoziona, ricco di sensazioni: tra le erbe e spezie aromatizzanti sono protagonisti l’artemisia e gli agrumi che con la china donano equilibrati toni amaricati e agrumati, che caratterizzano lo stile di Cocchi.
Il gusto è dunque ricco, con vibranti note di cacao e arancio amaro. Dall’infusione di alcuni legni nobili e balsamici arrivano in finale sentori lievemente canforati e note di rosmarino.
Tra gli ingredienti minori vi sono erbe e legni dai profumi unici come il sandalo, il muschio, la mirra, la noce moscata.

Vermouth di Torino is produced according to Giulio Cocchi’s original recipe. This vermouth falls into the category of sweet vermouths, or Italian vermouths, sweet and amber-colored, found in late 19th-century manuals.

Giulio Cocchi’s original recipe calls for herbs such as cinchona and rhubarb, which give the beautiful, pale wine a light brown hue.
