L’Arcimboldo Magazine e Guida enogastronomica, prende il nome dal pittore del ‘500 Giuseppe Arcimboldo poiché l’artista realizzò le famose “Teste Composte”, ovvero dipinti che, dall’insieme di prodotti ortofrutticoli, pesci e prodotti di cucina rappresentati su tela, rivelavano figure umane bizzarre, fantastiche a tratti misteriose.

L’Arcimboldo è altresì una statuina dalla forma moderna e stilizzata, creata dal 3D Artist Francesco Conte, esperto in lighting e look dev www.frankwy.com, che premia in Italia e all’estero  gli Artisti del Gusto: custodi e ambasciatori di arti antiche, capaci di saper narrare la storia, di comunicare la cultura del proprio territorio, guardando al futuro e restando al passo con i tempi le tendenze, con unicità e capacità emozionale.

Con il riconoscimento de L’Arcimboldo vi è l’attribuzione da uno a tre pennelli, espressione della creatività e dello spessore professionale di ogni artista.

A quattordici anni ha iniziato come banconista, un’esperienza che Giuseppe Bellia, oggi 48 anni e originario di Paternò, considera fondamentale per il proprio percorso. È dietro quel bancone che ha imparato a conoscere le persone, ad ascoltare le loro storie e ad apprezzare profondamente i dolci del territorio.

Proprio l’incontro quotidiano con la clientela lo ha portato a comprendere che il dolce non è soltanto una preparazione gastronomica, ma può essere un vero portatore di storia. Da qui è nata la volontà di specializzarsi nella conoscenza della tradizione dolciaria siciliana, nelle sue ricette, nei suoi ingredienti e nei ricordi che ogni preparazione può custodire.

UN’ANTICA DIMORA NOBILIARE A GIARRE

Nel 2019 Giuseppe Bellia apre la sua pasticceria a Giarre, all’interno di un’antica dimora nobiliare ottocentesca. Un luogo ricco di storia che diventa parte integrante del suo progetto: uno spazio dedicato all’artigianalità, alla cultura del dolce e ai sapori della Sicilia.

Il laboratorio, che si sviluppa su circa 170 metri quadrati, e la pasticceria finemente arredata rappresentano il punto d’incontro tra passato e presente. L’antica architettura dialoga con una produzione artigianale in continua evoluzione, dando vita a una realtà nella quale la memoria del luogo si riflette nella filosofia del pasticcere.

È proprio per sintetizzare questa visione che Bellia ama definirsi “un antico pasticcere nei tempi moderni”: custodire la tradizione senza cristallizzarla, modificando alcuni processi quando necessario, ma mantenendone intatta l’identità.

LA TRADIZIONE COME PATRIMONIO DA CUSTODIRE

Il progetto di Bellia nasce dalla volontà di impedire che il patrimonio dolciario siciliano vada perduto. La sua ricerca parte dalle ricette tradizionali e si sviluppa attraverso una sensibilità contemporanea, con particolare attenzione alla stagionalità e alle intolleranze.

L’ispirazione arriva dalla natura e da ciò che ogni stagione offre. Primavera e autunno sono tra i periodi che predilige, anche per la ricchezza delle festività, quando la tradizione siciliana propone un patrimonio straordinario di dolci che possono essere riproposti nella loro autenticità oppure reinterpretati in chiave contemporanea.

Dai cannoli farciti al momento alle cassate al forno, dalle paste di mandorla alla piccola pasticceria, fino alle torte personalizzate e alle preparazioni più contemporanee, ogni creazione nasce dall’incontro tra materia prima, tecnica, memoria e territorio.

LA SICILIA NELLA MATERIA PRIMA

La qualità per Giuseppe Bellia parte innanzitutto dalla scelta degli ingredienti. Utilizza materie prime prevalentemente del territorio, affiancandole a eccellenze provenienti da altre zone d’Italia. La ricerca riguarda ogni elemento, dal semplice latte fino alle pregiate nocciole delle Langhe, perché l’obiettivo è sempre quello di raggiungere la massima qualità.

La Sicilia rimane però la protagonista assoluta delle sue creazioni, con mandorle siciliane, gelsi dell’Etna, agrumi siciliani, ricotta fresca e frutta di stagione a chilometro zero.

Sono ingredienti che non rappresentano soltanto una scelta gastronomica, ma diventano strumenti per raccontare un territorio, la sua cultura e la sua storia.

IL DOLCE COME EMOZIONE

Per Bellia un dolce non deve essere semplicemente buono e bello. La parola che più di ogni altra descrive il risultato che ricerca è “emozionante”.

Il suo obiettivo è riuscire a risvegliare un ricordo, evocare una persona, riportare alla mente un momento della propria vita. È questa la ragione per cui, secondo il pasticcere, il cliente può innamorarsi della novità per un periodo, ma alla fine torna sempre alla tradizione, soprattutto durante le feste o la domenica.

A volte, racconta Bellia, ci sono persone che acquistano un dolce proprio per sentire più vicina una persona che non c’è più. È in quel momento che la pasticceria supera il semplice piacere del gusto e diventa memoria.

LO SCRIGNO DEI SAPORI

Tra i progetti che meglio rappresentano questa filosofia c’è Lo Scrigno dei Sapori, un cofanetto dedicato alle diverse espressioni della tradizione dolciaria siciliana.

Paste di mandorla e dolcetti artigianali compongono un vero viaggio attraverso l’Isola, con mandorla di Avola, pistacchio di Bronte, mandarino di Ciaculli, cedro e amarena, insieme ad altre interpretazioni legate alla stagionalità e alla ricerca del laboratorio.

Ma lo Scrigno non è soltanto una confezione di dolci. Al suo interno trova spazio una cartolina già affrancata, pensata per raccogliere un pensiero, un ricordo, un’emozione.

Dopo aver assaporato i prodotti, chi riceve lo Scrigno può scrivere al pasticcere e rispedire la cartolina. Un gesto semplice, quasi appartenente a un tempo passato, che trasforma il prodotto in un mezzo di comunicazione e condivisione.

È un’idea che racchiude perfettamente la filosofia di Bellia: il dolce può viaggiare, lasciare un’emozione e tornare indietro attraverso le parole di chi lo ha assaggiato.

TRA RICONOSCIMENTI E VALORIZZAZIONE DELLA SICILIA

Il percorso professionale di Giuseppe Bellia ha ottenuto anche il riconoscimento del Gambero Rosso, con “Una Torta” inserita nella guida Pasticceri & Pasticcerie.

Il pasticcere è inoltre legato a Duciezio, associazione di maestri pasticcieri nata per valorizzare e tutelare il patrimonio dolciario della Sicilia, ed è socio della Con.Pa.It. Sicilia.

UN PAESAGGIO CHE DIVENTA ISPIRAZIONE

La pasticceria di Giuseppe Bellia è anche un luogo privilegiato per osservare il paesaggio siciliano. Dalla montagna al mare, il territorio entra nel suo mondo creativo e diventa parte dell’ispirazione quotidiana.

La costa jonica, osservata da Taormina, continua a emozionarlo profondamente. Ha viaggiato in diverse parti d’Europa e anche il Trentino gli ha lasciato emozioni importanti, ma è il paesaggio della sua terra quello che sente più vicino e capace di dargli la forza per continuare a ricercare e migliorarsi.

Per Giuseppe Bellia, dunque, la pasticceria non è soltanto il luogo nel quale nascono i dolci. È uno spazio nel quale territorio, memoria, cultura e sentimento si incontrano.

L’Arcimboldo Magazine and Food & Wine Guide takes its name from the 16th-century painter Giuseppe Arcimboldo, who created the famous “Composed Heads”: extraordinary paintings in which fruit, vegetables, fish and culinary products were brought together on canvas to reveal bizarre, fantastical and at times mysterious human figures.

L’Arcimboldo is also represented by a modern, stylized statuette created by 3D Artist Francesco Conte, an expert in lighting and look development [www.frankwy.com], which recognizes the Artisti del Gusto in Italy and abroad: custodians and ambassadors of ancient arts, capable of telling stories, conveying the culture of their territory, looking toward the future and keeping pace with contemporary trends through uniqueness and emotional depth.

The L’Arcimboldo recognition includes the award of one to three Brushes, representing the creativity and professional stature of each artist.

At the age of fourteen, Giuseppe Bellia began working as a counter assistant, an experience that he considers fundamental to his professional journey. Today 48 and originally from Paternò, Sicily, he looks back on those early years as a time when he learned to understand people, listen to their stories and, above all, develop a deep appreciation for the traditional sweets of his homeland.

His daily encounters with customers led him to understand that a dessert is not simply a gastronomic creation, but can also be a true bearer of history. From this awareness came his desire to explore the Sicilian pastry tradition in depth: its recipes, ingredients and the memories that each creation can preserve.

AN ANCIENT NOBLE RESIDENCE IN GIARRE

In 2019, Giuseppe Bellia opened his pastry shop in Giarre, inside an elegant 19th-century noble residence. A place steeped in history, it has become an integral part of his project: a space devoted to craftsmanship, pastry culture and the flavors of Sicily.

The approximately 170-square-metre laboratory and the finely furnished pastry shop represent a meeting point between past and present. The historic architecture dialogues with an ever-evolving artisanal production, creating a setting in which the memory of the place is reflected in the pastry chef’s philosophy.

It is precisely this vision that lies behind Bellia’s favorite definition of himself: “an ancient pastry chef in modern times” — someone who safeguards tradition without freezing it in time, adapting certain processes when necessary while preserving its essential identity.

TRADITION AS A HERITAGE TO BE PRESERVED

Bellia’s project is rooted in the desire to ensure that Sicily’s rich pastry heritage is not lost. His research begins with traditional recipes and develops through a contemporary approach, with particular attention to seasonality and food intolerances.

His inspiration comes from nature and from what each season has to offer. Spring and autumn are among the periods he loves most, also because of the richness of the festive calendar, when Sicilian tradition offers an extraordinary variety of desserts that can be presented in their authentic form or reinterpreted through a contemporary lens.

From cannoli filled to order to baked cassata, from almond pastries to petit fours, personalized cakes and more contemporary creations, every dessert is born from the meeting of ingredients, technique, memory and territory.

SICILY IN THE RAW MATERIALS

For Giuseppe Bellia, quality begins with the careful selection of ingredients. He primarily uses products from the local area, complemented by outstanding ingredients from other parts of Italy. Every element is carefully considered, from simple milk to the prized hazelnuts from the Langhe, because his aim is always to achieve the highest possible quality.

Sicily, however, remains the undisputed protagonist of his creations, with Sicilian almonds, Etna mulberries, Sicilian citrus fruits, fresh ricotta and seasonal zero-kilometre fruit.

These ingredients are not merely gastronomic choices. They become tools through which Bellia tells the story of a territory, its culture and its heritage.

DESSERT AS EMOTION

For Bellia, a dessert should not simply be good and beautiful. The word that best describes the result he seeks is “emotional.”

His goal is to awaken a memory, evoke a person or bring a moment from the past back to life. This is why, according to the pastry chef, customers may be attracted to novelty for a while, but eventually return to traditional desserts, especially on Sundays and during festive occasions.

Sometimes, Bellia explains, people buy a dessert precisely because they want to feel closer to someone who is no longer with them. It is at that moment that pastry transcends the simple pleasure of taste and becomes memory.

LO SCRIGNO DEI SAPORI

Among the projects that best embody this philosophy is Lo Scrigno dei Sapori, a gift box dedicated to the many expressions of Sicilian pastry tradition.

Almond pastries and handmade sweets create a true journey through the island, featuring Avola almond, Bronte pistachio, Ciaculli mandarin, citron and sour cherry, together with other interpretations inspired by seasonality and the laboratory’s ongoing research.

But Lo Scrigno is more than simply a box of sweets. Inside, there is also a pre-stamped postcard, designed to collect a thought, a memory or an emotion.

After tasting the products, the recipient can write to the pastry chef and send the postcard back. A simple gesture, reminiscent of another era, transforms the product into a means of communication and sharing.

It is an idea that perfectly embodies Bellia’s philosophy: a dessert can travel, leave behind an emotion and return through the words of the person who tasted it.

RECOGNITION AND THE PROMOTION OF SICILIAN HERITAGE

Giuseppe Bellia’s professional journey has also received recognition from Gambero Rosso, with “Una Torta” featured in the Pasticceri & Pasticcerie guide.

The pastry chef is also associated with Duciezio, an organization of master pastry chefs founded to promote and safeguard Sicily’s pastry heritage, and is a member of Con.Pa.It. Sicilia.

A LANDSCAPE THAT BECOMES INSPIRATION

Giuseppe Bellia’s pastry shop is also a privileged place from which to observe the Sicilian landscape. From the mountains to the sea, the surrounding territory enters his creative world and becomes part of his daily inspiration.

The Ionian coast, viewed from Taormina, continues to move him deeply. He has travelled to various parts of Europe, and Trentino also left a lasting impression on him, but it is the landscape of his own land that he feels closest to and that gives him the strength to continue researching, creating and improving.

For Giuseppe Bellia, therefore, the pastry shop is not simply the place where desserts are created. It is a space where territory, memory, culture and emotion come together.

Because the most important result is not simply seeing a customer appreciate a dessert, but knowing that its flavor will remain in their memory. This is where, for Bellia, a dessert truly becomes art.
