UN PERCORSO NATO A QUATTORDICI ANNI

La storia professionale di Francesco Anello comincia quando ha appena quattordici anni. È allora che entra per la prima volta in una cucina professionale di Palermo come commis. Quella che potrebbe sembrare soltanto una prima esperienza lavorativa diventa invece l’inizio di una passione destinata a trasformarsi in una professione.

Negli anni successivi arrivano nuove esperienze, in diverse realtà ristorative, dentro e fuori dal territorio siciliano. Ogni cucina diventa occasione di confronto, ogni brigata un luogo nel quale imparare tecniche, metodi e sensibilità differenti.

La crescita avviene gradualmente, ruolo dopo ruolo: da commis a demi chef de partie, quindi chef de partie, sous chef e infine chef di cucina. Un percorso costruito sul campo, attraverso la conoscenza concreta della materia prima e il lavoro quotidiano della brigata.

LE ESPERIENZE CHE HANNO FORMATO LO CHEF

Tra le tappe più significative figura l’esperienza all’Astoria Palace Hotel di Palermo, una delle realtà alberghiere di riferimento della città, dove Anello ricopre il ruolo di capo partita.

Nel suo percorso arriva anche la selezione per Villa Crespi, il ristorante dello chef Antonino Cannavacciuolo. Un’opportunità importante, che per motivi personali non riesce a concretizzarsi, ma che rappresenta comunque un passaggio significativo nella sua crescita professionale.

Parallelamente, Anello approfondisce alcune delle tecniche che diventeranno parte del suo linguaggio gastronomico: dalle cotture a bassa temperatura alla fumicatura a freddo, dal barbecue alla lavorazione delle carni e dei prodotti ittici.

Oggi Francesco Anello è co-proprietario ed Executive Chef del MOAN Restaurant, nel centro storico di Palermo. Qui segue direttamente la direzione della cucina, dalla creazione dei menu alla selezione delle materie prime, fino alla gestione quotidiana dell’offerta gastronomica.

Il MOAN diventa così molto più di un ristorante: è il luogo nel quale le esperienze accumulate negli anni trovano una sintesi e si trasformano in una proposta personale.

It is within this setting that twenty-nine-year-old Francesco Anello has chosen to shape his own vision of hospitality, transforming a professional journey that began at a very young age into both an entrepreneurial and gastronomic reality.

A JOURNEY THAT BEGAN AT THE AGE OF FOURTEEN

Francesco Anello’s professional story began when he was just fourteen years old. It was then that he first entered a professional kitchen in Palermo as a commis chef. What might have seemed like simply a first work experience instead became the beginning of a passion destined to develop into a profession.

Over the following years, new experiences followed in different restaurants, both within and beyond Sicily. Each kitchen became an opportunity for exchange, and each brigade a place where he could learn different techniques, working methods and culinary approaches.

His growth took place gradually, one position at a time: from commis chef to demi chef de partie, then chef de partie, sous chef and eventually chef de cuisine. A journey built through hands-on experience, a concrete understanding of ingredients and the daily discipline of working within a professional brigade.

THE EXPERIENCES THAT SHAPED THE CHEF

Among the most significant stages of his career was his experience at the Astoria Palace Hotel in Palermo, one of the city’s leading hospitality establishments, where Anello worked as chef de partie.

His professional journey also brought him to an important milestone: being selected for Villa Crespi, the restaurant of renowned chef Antonino Cannavacciuolo. It was a significant opportunity which, for personal reasons, he was ultimately unable to pursue, yet it nevertheless represented an important moment in his professional development.

Alongside his experiences in professional kitchens, Anello continued to deepen his knowledge of culinary techniques that would later become part of his gastronomic language: from low-temperature cooking to cold smoking, from barbecue techniques to the preparation of meat and seafood.

Today, Francesco Anello is co-owner and Executive Chef of MOAN Restaurant, located in the historic centre of Palermo. Here, he personally oversees the kitchen, from menu creation and ingredient selection to the day-to-day management of the restaurant’s gastronomic offering.
