Le radici di una storia lunga ottant’anni

Nel cuore di Messina, tra le strade di Camaro e il respiro dello Stretto, la Pasticceria Principe di Panebianco racconta una storia che inizia nel 1945 e attraversa due secoli senza mai perdere il profumo delle origini. È il bisnonno Giuseppe Panebianco ad accendere per primo quella fiamma, nel settembre del 1944, quando avvia una piccola produzione di caramelle e torroni. L’anno dopo nasce ufficialmente la pasticceria artigianale, destinata a diventare un punto di riferimento per la città. Da allora, giorno dopo giorno, biscotti, dolci tipici messinesi, granite e gelati costruiscono un’identità fatta di gusto e memoria.

Quattro generazioni, un’unica passione

Quella dei Panebianco è una famiglia che ha trasformato la dolcezza in eredità. Dopo Giuseppe, sarà il figlio Angelo a portare avanti il sogno, vivendo praticamente tutta la sua vita tra laboratorio e bancone. Anche oltre i novant’anni, Angelo resta il cuore pulsante dell’attività, affiancato dalla figlia Elena e dai nipoti. È una storia fatta di gesti ripetuti, di ricette tramandate e di un sapere che non si insegna nei libri, ma si respira nell’aria.

Il presente: Daniele e la nuova generazione

Oggi, a raccogliere questo testimone è Daniele Bonansinga, 35 anni, quarta generazione e volto attuale della pasticceria insieme al fratello Samuele. Dopo la scomparsa del nonno nel 2024, il peso dell’eredità si è trasformato in responsabilità e orgoglio. Daniele, classe 1991, è titolare e pasticciere, ma anche interprete contemporaneo di una tradizione che continua a evolversi senza tradirsi.

L’infanzia in laboratorio: dove nasce una vocazione

La sua storia personale comincia da bambino, accanto al nonno. Il laboratorio diventa il suo parco giochi, il banco da lavoro una scuola silenziosa. Osserva, impara, prova, sbaglia. È lì che nasce tutto. È il nonno a spingerlo a fare gavetta, a uscire dalla comfort zone per imparare anche altrove, nei panifici, tra impasti diversi ma complementari. Qualche esperienza in sala, durante le estati, non basta a distrarlo: la pasticceria è già il suo destino.

Nel tempo, Daniele sente il bisogno di affinare le sue competenze. Frequenta corsi con Con.Pa.It. e con Fabbri, entrando sempre più nel mondo dei dolci moderni.

Per Daniele, la creatività è un atto d’amore. Ogni dolce nasce come un omaggio al nonno Angelo, ma guarda avanti, verso nuove forme e nuovi gusti. La pasticceria, per lui, è viva, in continuo movimento. Si aggiorna, studia, osserva i grandi maestri, ma resta fedele a un principio: trovare un equilibrio tra memoria e innovazione.

Tutto inizia dagli ingredienti. Daniele predilige il chilometro zero, scegliendo limoni siciliani, fragole e frutta fresca di stagione. Il futuro: nuovi progetti e nuove sfide

Lo sguardo di Daniele è già rivolto avanti. Il progetto di aprire una seconda pasticceria nel cuore di Messina prende forma giorno dopo giorno.

Intanto, l’estate lo vedrà protagonista a Casa Peloro, a Torre Faro, con un progetto sul mare dedicato a gelati e granite. Un modo per portare la sua arte anche in nuovi contesti.

L’immaginazione: dolci come paesaggi

The Roots of an Eighty-Year History

In the heart of Messina, between the streets of Camaro and the breath of the Strait of Messina, Pasticceria Principe di Panebianco tells a story that began in 1945 and spans two centuries without ever losing the essence of its origins. It was great-grandfather Giuseppe Panebianco who first lit that flame in September 1944, when he started a small production of sweets and nougat. The following year, the artisanal pastry shop was officially founded, destined to become a landmark for the city. Since then, day after day, biscuits, typical Messina sweets, granitas, and ice creams have built an identity built on flavor and memory.

Four Generations, a Single Passion

The Panebiancos are a family that has transformed sweetness into a legacy. After Giuseppe, his son Angelo will carry on the dream, living practically his entire life between the workshop and the counter. Even in his nineties, Angelo remains the beating heart of the business, supported by his daughter Elena and grandchildren. It’s a story of repeated gestures, handed down recipes, and knowledge that isn’t taught in books, but is in the air.

Today, Daniele Bonansinga, 35, is carrying on this legacy, the fourth generation and the current face of the pastry shop, along with his brother Samuele. After his grandfather’s passing in 2024, the weight of the legacy has transformed into responsibility and pride. Daniele, born in 1991, is the owner and pastry chef, but also a contemporary interpreter of a tradition that continues to evolve without betraying itself.

Childhood in the workshop: where a vacation is born

His personal story begins as a child, alongside his grandfather. The workshop becomes his playground, the workbench a silent school. He observes, learns, tries, makes mistakes. That’s where everything begins. It was his grandfather who pushed him to work his way up, to step out of his comfort zone and learn elsewhere, in bakeries, with diverse yet complementary doughs. A few summer experiences in the dining room weren’t enough to distract him: pastry making was already his destiny.

Over time, Daniele felt the need to hone his skills. He attended courses with Con.Pa.It. and Fabbri, increasingly delving into the world of modern desserts. Technique, aesthetics, balance: each element became fundamental to building a personal language. But without ever forgetting where he came from.

For Daniele, creativity is an act of love. Each dessert is born as a tribute to his grandfather Angelo, but he looks forward, towards new shapes and new flavors. For him, pastry making is alive and constantly evolving. Daniele’s gaze is already turned forward. The plan to open a second pastry shop in the heart of Messina is taking shape day by day. Meanwhile, this summer he will be at Casa Peloro in Torre Faro, with a seaside project dedicated to gelato and granita. A way to bring his art to new contexts.
